OLD FAMILY RECIPE

[edit] Ingredients
Primary:
- 2 Pounds of MEAT (Buffalo, Beef, Pork, Chicken, Turkey)
- Garlic (2-4 cloves)
- Medium Sized Onion (Diced)
- Pinto Beans
- Black Beans (optional)
- Big Can of Crushed Tomatoes
- Can of Green Chile Peppers (Amount is up to you!)
- Half a Bottle of Corona or other Lager
Spices:
- Red Chili Powder (Don't add more than 1 tablespoon at a time)
- Cumin (Be careful! Don't add more than half a teaspoon at a time)
- Oregano(Epazote if possible)
- Salt & Pepper
- Honey
- Chopped Fresh Cilantro or Parsley (Dry if you have no other option) If using parsley, use a lot of it!
- Lime or Lemon Juice
Corn starch or flour if it's not thick enough for you

All of this is done uncovered:
- Heat Olive Oil in a pot large enough to hold all of the ingredients.
- Dice onion, add to pan.
- Chop garlic, add to pan.
- Once the onion starts to clear, add the meat.
- Add salt & pepper to taste.
- Once the meat is browned add the Green Peppers & Stir.
- Drain beans and add to the mix.
- Add 1/2 bottle of Lager. Cook until some of it has been absorbed or evaporated.
- Add Chili Powder
- Open tomatoes and add to the mix, do not drain.
- Add Spices (Except for Cilantro and Parsley)
- Simmer for 20 Minutes, if after 15 minutes it's not thick enough, add some flour.
- Add Cilantro or Parsley 5 minutes before serving.
Remember to taste and smell throughout the cooking process!
[edit] Important Notes
Freshly roasted and peeled chilies are the best if you can get them.
If it doesn't taste fresh enough, add more lime juice and parsley(careful about Cilantro!)
Beware of adding too much salt, as it reduces, the salt will concentrate.
I suggest mixing two different kinds of meat, pork+beef for example.
