Mini Meatloafs
[edit ] Background
Geandily came up with this when all of the other pans were dirty. But hey! Everybody loves the crispy outer sides and because it's in a muffin pan the meatloaf isn't all soggy and cooks twice as fast!
[edit ] Let's Cook
You will need a muffin pan for this. Those pans for brownies might work even better.
[edit ] Ingredients
Primary:
2~ pounds ground MEAT (Pork[If mixed with Beef or Buffalo], Beef, Buffalo, Turkey)
2-3 Garlic Cloves, chopped
Freeze Dried Red Onion (Hard to find, finely diced red onion would work even better)
1 Egg
1/2 Cup Breadcrumbs
1/4 Cup Beer ( More if it looks too dry)
Spices:
Ground Mustard
Salt
Fresh Ground Pepper
Chopped Fresh Parsley, use lots! (Save some extra leaves for later)
Worcestershire Sauce
Small Amount of Brown Sugar
Thyme
Don't be afraid to add your own spices!
For the Topping:
Brown Sugar
Ketchup
Dijon Mustard
Tablespoon of Water
[edit ] Directions
Preheat the oven to 350 Degrees F
Combine the Breadcrumbs, Ground Mustard, Salt, Pepper, parsley and Sugar and add half of the mixture to a large mixing bowl.
Put half of the meat on top of what you have just added to the bowl.
Add the egg & worcherherhestseshire sauce.
Add the rest of your spices
Put the other half of the meat in the bowl and mix well(Hands work best!)
Evenly press the mixture into muffin pan slots.
For the Topping:
Add the tablespoon of water to a small saucepan. Add 1/4 cup brown sugar, heat until the sugar begins to boil, stirring constantly.
Add 1/3 cup ketchup and 1/8 cup mustard, stir constantly for 2~ minutes.
Spread topping evenly across all of the mini meatloafs.
Bake for 30 minutes.
Remove from oven and put 1 parsley leaf on each mini meatloaf. BEAUTIFUL!
[edit ] Important Notes
Beware of hard to clean muffin pan(IT'S WORTH IT)
I can't be exactly sure on the amounts, if one of them seems wrong it probably is!
Sometimes the topping can bubble off and drip to the bottom of the oven. If this happens buy a drip pan or do a quick cleanup after the oven has cooled.
